Galette is style of free form French pasÂtry that can either have a sweet or savory fillÂing. Typically, galette pasÂtry crust is made using a flour and butÂter mixÂture. For our recipe, the butÂter is subÂstiÂtuted for a mildly robust extra virÂgin olive oil, with simÂiÂlar flaky results. Fresh raspÂberÂries are tossed in a sugÂary-lime mixÂture before topÂping the goat cheese.
The pasÂtry is baked until the berries has softÂened, cheese is bubÂbly, and the crust is a beauÂtiÂful golden-brown. A light sprinÂkle of fresh mint finÂishes this show stopÂping galette. Best served as either and appeÂtizer or as a dessert.
