The grilled peaches make this sweet-and-sour cockÂtail much more refreshÂing and creÂative. Mild-intenÂsity extra virÂgin olive oil adds a delightÂful pepÂperÂiÂness to these peaches, pairÂing well with really good whiskey or bourÂbon.
To make this cockÂtail, we first brush the fresh peaches with EVOO before sprinÂkling with a bit of sugar and grilling. The oil helps facilÂiÂtate the caramelizaÂtion of the sugÂars in the peaches and the litÂtle sugar we added to them, creÂatÂing excelÂlent grill marks and that nice touch of smokÂiÂness. The fresh lime juice and bitÂters round out the sweet and smoky flaÂvors, makÂing for a well-balÂanced cockÂtail.
