Panzarottis (or panzeÂrotti) is a deep-fried turnover or savory ​‘pocket’ pasÂtry with popÂuÂlarÂity throughÂout cenÂtral and southÂern Italy. Panzarotti resemÂbles smallÂish calÂzones and retain some simÂiÂlarÂiÂties to the famous oven-baked dish. Invented as a way to use up any extra bread dough, our homeÂmade verÂsion is excluÂsively for your very own panÂzarotti party, with leftÂovers (dough or othÂerÂwise) not very likely.
We use and recÂomÂmend extra virÂgin olive oil to fry these turnovers at 350°F — well below the smoke point for a high-qualÂity EVOO. You’ll be surÂprised how deliÂcious they are.
