Get ready to have your culiÂnary world rocked with these aweÂsome chicken parm sandÂwiches. Olive oil crispy chicken cutÂlets are joined with oodles of mozÂzarella, tomato sauce, and a quick and tasty pesto.
The crispy chicken is breaded in a well-seaÂsoned comÂbiÂnaÂtion of flour, salt, pepÂper, garÂlic, Italian seaÂsonÂing, panko bread crumbs, and parmeÂsan cheese before being pan-fried in mild-intenÂsity extra virÂgin olive oil. Olive oil works very well with high-heat cookÂing, able to withÂstand temÂperÂaÂtures of 400°F, well within the paraÂmeÂters of pan fryÂing (where the oil should mainÂtain a temÂperÂaÂture of 325 – 350°F). The quick pesto sauce still uses all the same fresh ingreÂdiÂents as a traÂdiÂtional pesto, just made in half the time. The pine nuts and garÂlic cloves are pan-toasted to infuse the sauce with flaÂvor, as are the fresh basil leaves and medium-intenÂsity extra virÂgin olive oil.
