Lobster rolls are a New England speÂcialÂity, in fact, a delÂiÂcacy. In our extra virÂgin olive oil poached lobÂster rolls, we aim to infuse as much flaÂvor as posÂsiÂble into these sandÂwiches. That flaÂvor infuÂsion hapÂpens durÂing the poachÂing stage, using EVOO instead of water and other aroÂmatÂics like garÂlic, herbs, and lemon.
Why poach in extra virÂgin olive oil? Poaching in EVOO introÂduces its own flaÂvors to the lobÂster, creÂatÂing a much more tenÂder and lusÂcious lobÂster than water ever could. In our poachÂing liqÂuid, we used garÂlic cloves, lemon peel, roseÂmary sprigs, and thyme sprigs to enhance these sandÂwiches.
