Lyonnaise salad (or Salad Lyonnaise) is a traÂdiÂtional dish hailÂing from the city of Lyon (touted as one of the best gasÂtroÂnomic cities in France). As far as salÂads go, this one hits all the high notes. The poached eggs act almost as a secÂond dressÂing, givÂing creÂdence to the bacon-fried crouÂtons to aid in the sopÂping. Frisee (or gem letÂtuces) give a litÂtle palate play, proÂvidÂing some crunch. While the dressÂing adds notes of tart and tang, roundÂing out the other ingreÂdiÂents harÂmoÂniously.
