This is one of those salÂads that tastes even betÂter after it sits for a few hours. Like pasta or potato salad, it needs a litÂtle time for the ingreÂdiÂents to meld together and marÂiÂnate. This parÂticÂuÂlar comÂbiÂnaÂtion is pretty easy to keep stocked year-round, but make sure to subÂstiÂtute any of the vegÂetable ingreÂdiÂents for whatÂever is fresh and excitÂing. I like to add asparaÂgus in the spring and grilled corn in the fall. Roasted beets and root vegÂgies make aweÂsome addiÂtions throughÂout the winÂter. However, you choose to spice this salad up, make sure you use a more delÂiÂcate olive oil for your dressÂing to really let the citÂrus and vegÂgies shine.
